Blue Bar-B-Q
2 - Blue fish fillets
1/2 of a green pepper, cored and sliced in strips
1/2 Bermuda onion, sliced in rings
1 cup - Open Pit Bar-B-Que sauce
salt & pepper
Old Bay (optional)
Heat bar-b-que grill to medium. Tear off two large rectangular sections of heavy duty aluminum foil. Spray alminum foil with butter flavored Pam. Lay one fresh, rinsed, blue fish fillet in the center of each foil rectangle (skin side down). Spray top side of fillet with butter flavored Pam, lightly season with salt and pepper. Layer onion rings and green pepper on each fillet, drizzle fillets with Bar-B-Que sauce. Close foil over fillets to form pouch and place on bar-b-que grill. Grill until vegetables are soft and fish is flaky (approximately 8 minutes). Remove from heat, sprinkle with Old Bay and serve.
Broiled Rockfish With Mayo
Line broiler pan with foil, spray with Pam. Place fillets in pan, salt and pepper to taste. Spread top of each fillet with mayonnaise. Cover with diced onions. Broil until golden brown and fish is flaky.
Rockfish Cakes
1 lb. shredded cooked rockfish
1 large egg
1/4 to 1/2 cup mayonnaise
1 teaspoon garlic powder
1 teaspoon Old Bay seasoning
1/2 teaspoon pepper
1/2 teaspoon apple cider vinegar
1 teaspoon Worcestershire sauce
1 teaspoon fresh lemon juice
Combine all ingredients, excluding rockfish, and mix with whisk. Fold in rockfish. Cover & refrigerate for at least 1 hour. Remove from fridge, form cakes & return to fridge for about 1/2 hour.
Lightly spray cookie sheet with Pam. Place cakes on cookie sheet & place under broiler until browned. Flip and brown the other side. To serve, place rockfish cake on kaizer roll, place two pieces crisp bacon on top of rockfish cake, drizzle with creamy ranch dressing, top with sliced tomato and lettuse. YUM!
Poor Boy's Delight
1 - Rock fish fillet
1 - small onion, thinly sliced
1 - 14 1/2 oz. can diced tomatos (partially drained)
1 - 8 oz. package shredded mozzarella cheese
Old Bay Seasoning
Preheat oven to 350 degrees. Season both sides of rock fish with Old Bay. Spray baking pan with butter flavored Pam. Layer thinly sliced onions on bottom and place seasoned fillet directly on top of onions. Spoon diced tomatos on top of fillet; bake in preheated oven until flaky. Remove from oven and sprinkle with shredded cheese; return to oven to melt cheese. Remove from oven when cheese has melted, sprinkle with Old Bay and serve immediately. Serves 4-6.depending on size of fillet.

1 - 14 1/2 oz. can garlic & onion dices tomatos & Italian blend shredded cheese
1 - 14 1/2 oz. can stewed tomatos, mozzarella cheese & sliced black olives
